Did you know you can eat the green tops of carrots?
Seriously.
They are high in vitamin C, vitamin K, and potassium.
Who knew?
Truth be told, they often go to our chickens. But everybody doesn’t have chickens.
You can easily turn them into deliciousness.
Here’s a few different options you may not have thought about…
- chop into a green salad or stir fry
- dry and use as an herb like parsley
- add them to stock or soup
- make pesto
That’s right, pesto!

Whether you use them or not, you will want to separate the greens from the carrots to store them.
This will help keep your carrots crisp and fresh.
Carrots will stay fresh for weeks in your fridge.
It is not necessary to peel them. Carotene and trace minerals are close to the carrot’s skin surface. Use a vegetable brush or cloth under running water to remove any dirt.
Fresh farm carrots are delicious roasted, steamed, or raw.
