My friend Joy laughs at me because I eat our spinach straight out of the bag.
At my kids’ co-op we bring lunch from home.
I have trained my kids to pack their own lunch.
(This is awesome.)
I usually just grab a bag of spinach for myself.
I like salads, but eating spinach straight out of the bag is so much more convenient!
No dressing, toppings, or fork necessary.
I can even eat it while in the car or at the park with my kids.
And I’m getting loads of health benefits at the same time.
I realize not everyone eats greens like I do-
Great news, there are lots of ways to enjoy spinach.
Did you know you can freeze spinach?
That’s right.
Freeze it.
I don’t suggest thawing it and eating it raw, but you can cook it or add it to a smoothie frozen.
Here are my 5 favorite ways to eat spinach:
- With eggs – omelets, scrambled, or in a casserole
- Sautéed with a little salt, and pepper
- In a smoothie with almond milk, almond butter, and fruit (strawberries, blueberries, and banana)
- As a salad with pecans and infused raspberry balsamic vinegar from Robust Kitchen Store
- Raw on a buffalo chickpea wrap; if the leaf is large enough I’ll use it as the wrap
