
It’s soup season!
I enjoy soups, and the best ones are made with fresh ingredients.
I bet you agree.
The only reason why I don’t make soups loaded with fresh veggies more often is because of the time they take to prepare.
My family’s favorite soup is Pot Herb Soup
I’ve been wanting to make this soup for a while.
I made it last year and everyone loved it.
I honestly forgot just how good it is.
I finally scheduled extra time for meal prep and made this soup last week.
Andrew and the kids kept raving about how good the soup was…
“This soup is SO good.”
“Mom, thanks for making this soup, it’s REALLY good.”
All night long they talked about it,
and they were excited to have it for lunch the next day too – bonus!
And just today, a week later they were asking me to make it again.
Talk about a win!
It feels so good to make quality nutrient dense food your kids love!
What’s fun for me is almost everything in the soup was made with produce from our farm.
I used the following:
- Triple M Acres dinosaur kale, collard greens, and red tabby spinach – you can substitute with ANY greens*
- Triple M Acres candy onions and carrots
- Yellow sweet potatoes from Early Bird Farms
This soup is too good not to share.
And it’s worth every minute it takes to chop the veggies!
And seriously, any greens work in this soup. I’ve used a variety of what we have on hand – turnip greens, cabbage, kale, collard greens, chard, arugula, spinach – all of them taste delicious!
