
Let’s talk radishes.
I’m going to be honest. I never liked radishes until we started growing them.
They were always too spicy on the veggie tray. I preferred all the other veggies – carrots, cucumbers, celery, broccoli, cauliflower, peppers, even mushrooms.
And I thought that was the only way to eat them.
I had alot to learn.
Thankfully a customer told me about roasting them. Roasting them in olive oil or butter with salt and pepper is absolutely delicious. They’re mild and creamy.
Another thing I found out was that in the cooler temps of spring and fall, radishes are more mild. The heat of the summer actually makes them hotter in taste.
And then my son came home from my mom’s house raving about this amazing sauce she made. So of course I asked her what it was…Pesto made from the radish tops I gave her.
I had no clue that was a thing!
Now, it’s our favorite pesto. We make it with basil and carrot tops also, but the radish top pesto is our favorite.
