Microgreens are considered a superfood because they are high in nutritional value.
These micro plants have up to 40% times more vitamins, enzymes, minerals, antioxidants, and beneficial properties than when the plant is fully grown. (According to research conducted by the University of Maryland and the USDA)
Some vitamins and minerals found in high quantities are…

Some varieties are milder than the mature plant (like broccoli & kale). These are the ones we “hide” in smoothies.
Others, like cilantro, leek, arugula, and radish are full of flavor.

Our uncle enjoys a salad from a local restaurant when he comes to town. It’s a basic salad – iceberg lettuce, cheese, and their famous salad dressing. The last time he was in town he added microgreens to this salad.
