Overcome Salad Boredom

You want to eat healthy, but sometimes you get in a rut.

Eating the same foods over and over again can get boring.

If you’re like me, you want simple meals loaded with health benefits and exploding with flavor.

 

Here are some ideas to delight your tastebuds while eating salad…

  1. Start with a quality farm fresh lettuce
  2. Add Microgreens – arugula and radish microgreens both have a lot of flavor
  3. Try different salad dressing – make your own or buy a quality one
    1. Here’s a recipe for Italian and Poppyseed
    2. Micro Meadows Maple Balsamic is one of our favorites, pick it up at LSL Market
    3. Robust Kitchen Store @ the Meadows has some tasty infused oil & vinegars you can pair
  4. Add leftover meat – this can change the salad quickly
    1. Taco meat
    2. Salmon
    3. Chicken with buffalo sauce
    4. Pulled pork with BBQ sauce
    5. Chuck roast
  5. Add a different protein source
    1. Diced hard boiled eggs
    2. Great northern beans, garbanzo beans, or black beans
  6. Add texture with nuts, seeds, or dried fruits
  7. Add a filler like rice or quinoa *try topped with sautéed veggies and tzatziki sauce
  8. Add tasty fresh veggies (sweet peppers, cucumbers, radishes, shredded carrots…)
  9. Add fresh fruit (avocado, blueberries, strawberries, peaches, apples…)
  10. Add a different kind of cheese (feta, gouda, mozzarella, cheddar…)
  11. Switch up the base. Instead of lettuce mix try…
    1. Asian Mix (mild mix of non heading cabbage, pac choi, and Japanese spinach)
    2. Power Mix (peppery kick of mizuna, mustard greens, and pac choi)
    3. Chopped Head lettuce (Butterhead, Romaine, Green Leaf, or Summercrisp Sandwich lettuce)

 

Get more greens in by thinking outside the box. Enjoy salad greens…

  1. On a breakfast sandwich
  2. With egg, tuna, or chicken salad
  3. Use a large lettuce leaf as a wrap
  4. In a smoothie – Our customer Amy prefers our lettuce mix in her smoothie over spinach!
  5. Chop up the lettuce and add to your pizza (Have you ever had taco pizza from Stefanina’s?)

 

Prepping veggies and toppings ahead of time makes it easier and more satisfying to eat greens every day.

 

Microgreens also make it easier to “eat your greens”.

Micros are loaded with nutrition and you can truly add them to EVERYTHING you are already eating.

We love to tell the story of Jayce eating a hot dog with so many microgreens on it you couldn’t even see the hot dog.

 

Here are some of my favorite salad combinations…

  1. Power mix with salmon, cranberries, micro arugula and maple balsamic
  2. Asian Mix with pulled pork, feta, avocado, micro radish, and homemade Italian
  3. Lettuce Mix with chick peas (or chicken), avocado, cucumbers, micro arugula, buffalo sauce, and ranch
  4. Lettuce Mix with micro salad mix, pecans (or sliced almonds), fresh blueberries, and homemade poppyseed
  5. Lettuce Mix with quinoa, sautéed peppers, feta cheese, cucumbers, and tzatziki sauce

 

Eating fresh greens regularly will help you have more energy to tackle your day.

 

You can pre-order your greens and pick up at the farm year round or pick up at the Lake St. Louis Farmers and Artists Market @ the Meadows on Saturdays.
