Quinoa with a Mexican Flair

We love Mexican food at our house.

Every Tuesday is taco night, and we regularly have enchiladas or a taco/nacho bar when friends are coming over.

This quinoa salad is my favorite summer potluck salad.

It’s flavorful, nutritious, and filling.

Fresh cilantro and scallions add so much zesty flavor.

It’s got quinoa and beans for added protein too.

Not familiar with quinoa?

Here’s a little info about quinoa:

    • pronounced (KEEN-wah)
    • gluten free edible seed of a grain crop
    • twice the amount of protein of white rice
    • rich in fiber, magnesium, potassium, iron, and folate
    • contains antioxidant and anti-inflammatory properties
    • cooked similarly to rice (in boiled water)
    • eaten either sweet or savory
